white bean chicken chili

Ingredients
  1. olive oil
  2. 2 carrots
  3. 2 stalks celery
  4. 1 medium onion
  5. 4 cloves garlic
  6. 3 chicken breasts
  7. 1 t. salt
  8. 2 T. cumin
  9. 1 T. oregano
  10. 2 t. chili powder
  11. 3 T. flour
  12. 4-5 c. chicken stock
  13. 2 cans white beans (low sodium)
  14. 1 can diced green chilies (4 oz.)
  15. 1 1/2 c. frozen corn
  16. spinach (5 oz. package)
  17. 1/4 t. red pepper flakes (optional)
Instructions
  1. Add oil to coat bottom of a large pot. Add diced carrots and celery. Cook for 3-5 minutes, just until softened. Add diced onion and minced garlic. Stir and let cook until onions are opaque- another 3-5 minutes.
  2. Add diced chicken. Add salt, cumin, oregano and chili powder. Cook until chicken is cooked through, for about another 5-7 minutes. Add flour and stir until you are no longer able to see it.
  3. Add stock. Simmer on low for 5 minutes. Add the beans (drained) and green chilies. Simmer for another 5 minutes.
  4. Add frozen corn and spinach and cook until the spinach is just wilted. Add optional red pepper flakes and stir to incorporate.
  5. Serve and enjoy!

Can you believe we’re halfway through May!? Holy moly, time just zips on by. Don’t waste any more time and get right to making this tasty soup. Often times, I like to edit recipes and that is exactly what I did with this one. I basically took the better of 2 different recipes and made one, which in my opinion, turned out fantastic. Many thanks to Rachael and Giada! Love you, let’s be bff’s, k?

Most people reserve soup for the colder months of the year, but I like soup year round. I make this recipe more than I probably should, but when I’m at a loss of what to make for dinner; I reach for this simple, healthy go-to. I also like the fact that it makes enough to have leftovers for a couple days because let’s be real- ain’t nobody got time to cook dinner every night of the week… especially those who work a later shift (me). Ha! I know that some are opposed to leftovers, which is fine, because you can easily cut this recipe in half or you could make this for a crowd. Either way, I’m sure it’ll quickly become a fave and you’ll be reaching for it all the time. Thanks for reading, have a fAB day!
