Hey guys! Hope you’ve having a wonderful week so far. If you’ve followed this blog for a while, you know that I love quirky graphic shirts, so it should come as no surprise that I had to snag this one as soon as I found it. I mean, it’s just too perfect for me! I looooove me some fries, but I do not even remotely like working out. My workouts are basically non-existent at this point… I know that working out is good for you, but I’m going to enjoy my metabolism while it still wants to work for me– I’ll workout later 😉  

Anyways, this is a Wildfox sweater and they are the softest things you’ll ever put on your body. I’ll admit that they are a bit pricier, but I was able to find this one for half of the normal price. Once you own one, you’ll understand why I’m willing to spend a bit more on them! I’ve worn these shorts a million times already this summer– a fave for sure. 9 helpful farmers market tips

Our local Farmers Market opened early this year and I was so excited. While I was there, I kept thinking of tips that would make your next trip a bit easier-

  1. Bring Cash- Most merchants nowadays have card readers, but most farmers do not. Make sure to bring small bills, so you don’t take all of their change.
  2. BYOB- Bring your own bags. It makes it much easier to fill your recyclable bags rather than carrying everything in your hands or worse, using plastic bags.
  3. Ask Questions- Ask the farmer where their produce was grown or better yet, ask them for new recipe ideas. They know their food the best, so make sure to pick their brains. They’re usually happy to give you any tips you may need.
  4. Think Outside the Box- Don’t go to the Farmers Market just for fruits and veggies. The Farmers Market has much more to offer, like breads, cheeses, jams, and candy!
  5. Make a List- Make a list so you know what you want/need. You don’t want to get more than you’ll use because it will go bad and waste is never a good thing.
  6. Make a Lap- Go around to each booth at least once. You want to see what everyone’s got, plus, you always want to get the best prices.
  7. Go Hungry- Most vendors and farmers have samples for you to try. Also, more and more food trucks are coming to the Farmers Market, so there will be plenty of food options.
  8. Arrive Early or Late- If you go early, the weather is still nice. If you go late, the merchants are usually offering the best deals because they don’t want to pack everything up to take home.
  9. Stay Protected- Remember your sunscreen and/or hats! Most Farmers Markets are outdoors and in direct sunlight. Always better safe than sorry in my opinion.

I know recipe posts have been few and far between, but truthfully, I haven’t been cooking much at all. We’re essentially living off of whatever we have in our pantry most days of the week… super healthy, right? I hope to get some new recipes to y’all shortly, but in the meantime, here is a roundup or some favorites over the last year. Yes, I said year! The fAB will be one year old on Friday. vegetables
  1. 2 large sweet potatoes, diced
  2. 12 oz. package of broccoli florets
  3. 12 oz. package of cauliflower florets
  4. 2 carrots, diced
  5. 1/2 c. white onion, chopped
  6. 12 oz. white mushrooms
  7. 4 T. olive oil
  8. salt and pepper
chicken
  1. 4 boneless, skinless chicken breasts
  2. 1 T. vegetable oil
  3. 1 T. lime juice
  4. 1 t. garlic powder
  5. 1/2 t. onion powder
  6. 1/8 t. cayenne powder
  7. 1 1/2 t. chili powder
  8. 1 t. cumin
  9. 1 1/2 T. pureed chipotle peppers in adobo sauce
  10. salt and pepper
glaze
  1. 1/3 c. honey
  2. 1 T. apple cider vinegar
Instructions
  1. For the vegetables- Preheat oven to 400 degrees. Place broccoli, cauliflower and carrots into a plastic Ziploc bag. Fill with a small amount of water and zip bag. Poke a few holes in bag. Steam in microwave for 2-2:30 mins.
  2. Repeat steaming method with sweet potato.
  3. Remove broccoli, cauliflower and carrots from bag and spread on baking sheet. Add chopped onion and mushrooms to baking sheet. Drizzle 2 T. olive oil over vegetables. Season with salt and pepper. Toss vegetables together, coating evenly.
  4. Remove sweet potato from bag and spread on another baking sheet. Drizzle 2 T. olive oil over sweet potatoes. Season with salt and pepper. Toss together, coating evenly.
  5. Roast vegetables for 40-45 minutes.
  6. For the chicken- add vegetable oil, lime juice, garlic powder, onion powder, cumin, salt and pepper, and pureed chipotle peppers to a large Ziploc bag. Add the chicken to the bag and squeeze bag to evenly distribute. Refrigerate at least 2 hours.
  7. Prepare the glaze. In a small bowl, combine honey and apple cider vinegar. Set aside.
  8. Place chicken on a hot grill. Grill until each side is golden brown (about 4-5 mins per side) and the internal temperature reaches 165 degrees.
  9. During final minutes, brush honey glaze over the chicken.
  10. For the bowl- fill half the bowl with roasted sweet potatoes and the other half with the rest of the roasted vegetables. Top with sliced chicken.
Notes
  1. You will have left over pureed chipotle peppers. Divide this how you wish into small plastic bags and freeze to use later!
  2. This chicken is on the spicy side. If you want to take it down a notch, add less chipotle puree.
  3. Also, you can reserve some of the honey glaze to drizzle over the chicken prior to serving.
  4. You can pre-steam the vegetables any way you wish; however, the microwave is fastest!

One of my favorite things to do while travelling is to eat at new restaurants. I spend a ridiculous amount of time researching exactly where I want to eat prior to even leaving home. Basically, if you don’t like to eat, don’t travel with me. Haha! While in Scottsdale (read about my trip, here), I met the “protein bowl” and was inspired to come home and try my own take on it. Basically, you can put whatever you want in it, but as far as I’m concerned, ChopShop Co. does it perfectly. I freaking loved this place! Ingredients
  1. 1 c. frozen mixed berries
  2. 2 oz. frozen acai puree, thawed
  3. 1/4 c. Greek yogurt (I use Fage)
  4. 1/3 c. almond milk (I use Silk)
  5. 1 stevia packet
optional toppings
  1. granola (preferably one that has no more than 5g of sugar)
  2. nuts
  3. flaked coconut
  4. banana
  5. assorted berries
  6. honey
Instructions
  1. Combine mixed berries, acai puree, Greek yogurt, almond milk and stevia into a blender. Blend until you've reached desired consistency. Remember, it should be thick enough to eat with a spoon.
  2. In a small bowl, place 1/2 c. granola.
  3. Pour acai berry mixture over granola.
  4. Top acai berry mixture with desired toppings.
Notes
  1. You can now find frozen acai puree in most grocery stores. I found mine at Target, next to the frozen fruit.
  2. You can make the acai berry mixture as sweet as you would like. Simply add more or less stevia or any other preferred sweetener.
  3. For this particular one, I topped it with macadamia nuts (since my mom had brought some back from Hawaii), flaked coconut, raspberries, banana and I drizzled a bit of honey on top of it all.

You see/hear about acai bowls everywhere, but I’d never had one and wanted to see what all the hype was about. Well, it definitely lived up to the hype and exceeded my expectations. It wasn’t necessarily what I had in mind, so if you’re like me and wondering what it even is- let me explain. Essentially it is a thick smoothie (thick enough to eat with a spoon), topped with granola, nuts, fruit, etc. I had my first one while in AZ (you can read more about that here) and I’ve been craving one ever since. Lucky for me, it’s quite easy to whip up at home and makes for a great start to the day. You can also customize it by adding whatever topping you want or have on hand. Make sure you give ’em a whirl- I’m sure you’ll jump right on that acai bowl wagon! I hope you enjoy; have a fAB day.
